Oatmeal Bears Cookie

125g butter
1/4 cup sugar
1/4 cup oat bran
1 cup plain flour
1 tsp vanilla essence (optional)
Soften butter and mix with sugar and vanilla essence with a wooden spoon.
Mix in oats, then flour.
Separate into 2 portions and wrap in cling wrap.
Chill in fridge till firm.
Take out 1 chilled portion and roll out to about 1cm thick in between 2 sheets of cling wrap.
Cut with bear shape cookie cutter.
Re-chill dough if it becomes too soft to handle and work on the other portion.
Bake in oven at 190 C until lightly brown.
Cool and store in airtight container.
